An Easy Overnight Breakfast Casserole

This overnight breakfast casserole is better than your average breakfast bake for one simple reason – all the meat! That’s right, we’ve got bacon AND sausage in there. No need to choose one or the other, why not just go with both!

You prep everything fully the night before and only have to pop it into the oven in the morning. This is a great breakfast idea for holidays or when you have guests over. Why I Love Make Ahead Casseroles

Seriously, there is nothing NOT to love about a make ahead casserole. For starters, they’re easy. It requires zero brain power in the morning. Like a robot could do it. Wake up, brush teeth, insert casserole into the oven. But don’t forget to turn the oven on!

It also minimizes stress and rushing around in the morning. I don’t know about you, but sometimes I start to feel like a line cook making a different breakfast for each member of the family. With the casserole, everyone knows what’s for breakfast before they even go to bed the night before. No complaints, no special requests.

Overnight breakfast casseroles are especially great for a larger family or if you are hosting a small breakfast or brunch gathering.

Tips for the Best Breakfast Casserole

Not all breakfast casseroles are the same, so follow these tips to make sure this one is just perfect.

  • Don’t forget to grease your baking dish. It might seem like a simple step you can skip but you’ll have no fun doing the dishes if you miss this step.
  • Give your casserole time out of the fridge before baking. This will allow the temperature to lower back to room temp and the baking will be more even.
  • You can opt to add-in or sub-in ham, too. The more meat, the better! While we’re talking add-ins, you could also sauté some peppers and onions and throw those in, too.
  • You could also swap out the bread cubes for hash browns but you may need to adjust your baking time.
  • If you don’t have shredded cheddar, you can use any shredded cheese you do have, like pepper jack or mozzarella.

Serving Suggestions

I love this casserole because it is packed with eggs, meat, and bread. It’s like getting a whole breakfast in one slice. You’ve got the eggs, the breakfast meat, and the toast on the side. To balance all of that savory, you might want to serve it up with something sweet like these Nutella Banana Swirl Muffins. Or during the Fall months, these Pumpkin Cream Cheese Swirl Muffins!

Another light and sweet option are these Blueberry Scones. Use any frozen fruit you have to make them fit any season!

How to Store Leftovers

This breakfast bake casserole is best served fresh, so I suggest enjoying it right out of the oven. You can store your leftovers in the refrigerator for about 3 days. When you’re ready to eat your leftovers, you can reheat each slice using a microwave.
