# What You’ll Need to Cook:

01 - 2 teaspoons sesame oil
02 - 500 grams ground chicken
03 - 2 cloves garlic, minced
04 - 1 small shallot, finely diced
05 - 1 tablespoon lemongrass, finely minced (use tender inner core or 1 teaspoon pre-ground paste)
06 - 60 grams roasted cashews, chopped
07 - 2 stalks green onions, sliced
08 - 2 tablespoons seasoned rice vinegar
09 - 2 tablespoons hoisin sauce
10 - 1 tablespoon low-sodium soy sauce
11 - 1 tablespoon garlic chili sauce or Sriracha
12 - 1 tablespoon fresh cilantro, chopped

13 - 1 head butter lettuce (or bibb or romaine), leaves separated, rinsed and dried
14 - 2 tablespoons roasted cashews or peanuts, chopped (for garnish)
15 - 2 stalks green onions, sliced (for garnish)
16 - 1 tablespoon fresh cilantro, chopped (for garnish)
17 - 1 teaspoon sesame seeds (optional)
18 - Favorite hot sauce, to serve (optional)

# Steps to Prepare:

01 - Mince the garlic and shallot finely. Prepare lemongrass by using the pale, tender inner core, finely chopping or squeeze from a tube if using pre-ground version.
02 - In a large nonstick skillet over medium heat, warm the sesame oil. Add the minced garlic and shallot. Sauté for 1–2 minutes until fragrant but not browned.
03 - Add ground chicken to the pan. Cook, breaking up the meat with a spatula, for about 5–6 minutes or until no longer pink. Drain excess fat if necessary.
04 - Stir in lemongrass, cashews, and green onions. Pour in seasoned rice vinegar, hoisin sauce, soy sauce, and garlic chili sauce. Cook, stirring, for another 2–3 minutes, ensuring the chicken is thoroughly coated and sauce is slightly reduced.
05 - Remove from heat and fold in chopped cilantro. Taste and adjust seasoning with additional soy sauce or chili sauce as desired.
06 - Separate lettuce leaves, wash thoroughly, and pat dry. Place a generous spoonful of warm chicken mixture in the center of each leaf.
07 - Garnish with extra cashews or peanuts, sliced green onions, fresh cilantro, sesame seeds, and a drizzle of hot sauce if preferred. Fold leaves around filling and serve immediately.
