Preheat oven to 220°C. Line a baking sheet with parchment paper or lightly grease to prevent sticking.

Cut zucchini into even 5 mm rounds. Place slices in a large bowl. Drizzle with olive oil, add salt and black pepper, and toss to coat every piece evenly.

Lay zucchini slices in a single layer on the prepared baking sheet. Sprinkle grated Parmesan cheese evenly over each slice.

Bake for 20 to 25 minutes, or until cheese is golden and the edges of the zucchini are crisp.

Let zucchini cool for a few minutes to develop extra crispness. Serve warm as an appetizer or side dish. Optional: finish with a squeeze of fresh lemon juice.
