In a mixing bowl, stir together rolled oats, milk, Greek yogurt, honey, vanilla extract, chia seeds if using, and salt until thoroughly combined.

Fold in the sliced strawberries gently, reserving a small portion for garnishing.

Divide the mixture evenly into two lidded jars or containers. Add the reserved strawberries on top. Seal and refrigerate for no less than 4 hours, preferably overnight, to allow setting and flavor melding.

Before serving, stir the oats well. Add a splash of milk to adjust consistency if preferred. Consume chilled or warm briefly in the microwave.
