Cover the mixture and refrigerate for a minimum of 4 hours or preferably overnight to allow chia seeds to absorb liquid and thicken.

After chilling, stir thoroughly to break up any clumps. If the pudding is too thick, gradually add a splash of coconut milk to achieve desired consistency.
