Over medium heat, cook the beef sausage in a large skillet, breaking it apart with a spatula, until browned and fully cooked, approximately 5-7 minutes.

Whisk together the eggs, milk, salt, and black pepper in a mixing bowl until well combined and frothy.

Add the egg mixture to the skillet with the cooked sausage. Stir gently as the eggs begin to set, cooking for about 5 minutes until just set but slightly runny. Stir in the shredded cheese until melted.

Place a tortilla on a flat surface. Spoon a generous portion of the sausage and egg mixture onto the center. Roll tightly, folding in the sides to enclose the filling. Repeat with remaining tortillas and filling.

Heat a small amount of cooking spray or oil in the skillet over medium heat. Place the roll ups seam-side down and cook until golden brown on all sides, about 2-3 minutes per side.

Remove roll ups from the skillet and allow to cool briefly. Slice in half and serve, optionally with salsa or hot sauce.
