Vegan Drunken Noodles (Printer-Friendly)

# What You’ll Need to Cook:

→ Sauce Ingredients

01 - 2 tbsp soy sauce or tamari
02 - 2 tbsp dark soy sauce
03 - 4 tbsp vegetarian oyster sauce
04 - 2 tbsp coconut sugar
05 - 2 tbsp water
06 - Pinch chili flakes

→ Stir Fry Ingredients

07 - 8 oz wide rice noodles
08 - 1 ½ tbsp neutral oil (e.g., avocado oil)
09 - 1 small white onion, peeled and thinly sliced (150 g, about 1 ¾ cups sliced)
10 - 4-5 green onions, cut into 1-inch pieces
11 - 4 cloves garlic, minced (18 g)
12 - 1 red bell pepper, chopped (185 g)
13 - 3 cups chopped green cabbage (300 g)
14 - 1-2 Thai red chilis, seeds removed and very thinly sliced
15 - 1 cup fresh Thai basil or holy basil, plus more for serving
16 - Lime wedges, for serving (optional)

# Steps to Prepare:

01 - Follow the directions on the rice noodle package or transfer the noodles to a heat-proof bowl and cover with hot water. Soak noodles for 10-15 minutes, until just tender. Drain noodles, then set aside for cooking. Ensure the noodles are softened but slightly al dente, as they will finish cooking in the pan.
02 - Combine all sauce ingredients in a small bowl. Whisk until the sugar dissolves, then set aside.
03 - Heat the oil in a wok or large skillet over medium-high heat. When the pan is hot, add the onion, green onion, red pepper, and cabbage. Stir fry for 4-5 minutes or until the vegetables are tender-crisp.
04 - Add the minced garlic and stir fry for 1 minute until fragrant.
05 - Add the soaked noodles, prepared sauce, Thai basil, and sliced chilis to the pan. Toss to coat the noodles evenly and cook for 1-2 minutes until warmed through and the sauce is absorbed.
06 - Divide the noodles between serving bowls. Garnish with additional Thai basil, sliced chilis, and serve with lime wedges, if desired.

# Extra Cooking Tips:

01 - Fresh wide rice noodles are recommended for optimal texture but dried wide rice noodles can be used as an alternative.
02 - Thai or holy basil provide the most authentic flavor, but Italian basil can be substituted if needed.
