Bring a large pot of salted water to a boil. Cook spaghetti until al dente. Drain and set aside. Reserve 1/2 cup of pasta water.

Heat olive oil in a large skillet over medium heat. Sauté diced onions and bell peppers until softened. Add ground beef and cook until browned. Drain excess fat.

Stir in taco seasoning, tomato sauce, and diced tomatoes. Simmer for 5 minutes to blend flavors. Add reserved pasta water if needed.

Add cooked spaghetti to the sauce and toss to coat. Reduce heat and sprinkle shredded cheese on top. Cover and let cheese melt for 3–4 minutes.

Serve hot, garnished with cilantro, diced tomatoes, or sour cream. Add crushed tortilla chips for crunch if desired.
