Taco Bell Enchirito Beef Beans (Printer-Friendly)

Seasoned beef, refried beans and cheddar cheese wrapped in soft tortillas, topped with rich sauce for a classic favorite.

# What You’ll Need to Cook:

→ Filling

01 - 500 g ground beef
02 - 1 medium white or yellow onion, diced
03 - 1 packet (about 30 g) taco seasoning
04 - 120 ml beef broth or water
05 - 400 g canned refried beans

→ Assembly

06 - 4 large (burrito-size) flour tortillas
07 - 120 ml Taco Bell hot sauce or red enchilada sauce
08 - 100 g shredded cheddar cheese

# Steps to Prepare:

01 - Heat a large skillet over medium heat. Add ground beef and diced onion, cooking until the meat is browned and the onion is softened, about 6–8 minutes. Break the meat apart with a spatula as it cooks.
02 - Stir in taco seasoning and beef broth. Mix thoroughly and simmer uncovered for 4–5 minutes, allowing the mixture to thicken slightly. Remove from heat.
03 - Place refried beans in a microwave-safe bowl and heat until hot. Wrap the flour tortillas in a damp paper towel and microwave for 30–40 seconds until soft and pliable.
04 - Spread a generous layer of refried beans onto each warm tortilla. Top with a portion of the beef mixture. Roll up each tortilla to fully enclose the filling.
05 - Place rolled tortillas seam-side down on a plate. Pour hot sauce over the top and sprinkle with shredded cheddar cheese. For melted cheese, place under a hot grill for 30 seconds if desired. Serve immediately.

# Extra Cooking Tips:

01 - To maximize freshness and avoid sogginess, store each component separately and assemble just before serving.
02 - Try additional toppings such as guacamole, sour cream, or fresh cilantro to customize each enchirito.
