Wash delicata squash thoroughly, slice each in half lengthwise, and scoop out seeds using a spoon.

Place cut squash halves on a board. Brush or rub cut surfaces with olive oil, then evenly sprinkle with salt, black pepper, and cinnamon. Drizzle maple syrup over each half if desired.

Lay squash halves cut side down on a lined baking tray for optimal caramelisation.

Roast in the preheated oven for 25–30 minutes until squash is fork-tender and edges are lightly caramelised.

Allow squash to cool slightly, then serve warm. The skin is edible and adds pleasant texture.
