Using a hand mixer or whisk, beat the softened cream cheese until smooth and lump-free. Add the Greek yogurt and continue mixing until fully incorporated and creamy. Stir in powdered sugar or honey, vanilla extract, lemon zest, and lemon juice until evenly combined.

Line a baking sheet with parchment paper. Pour the mixture onto the sheet and spread evenly to approximately 1.3 centimeters thickness. Sprinkle optional toppings such as additional lemon zest or crushed graham crackers if desired. Place flat in the freezer.

Freeze the spread mixture for at least 3 to 4 hours or until completely solid.

Remove the frozen bark from the freezer. Lift it from the baking sheet using the parchment paper and break into irregular pieces or cut into squares with a knife as preferred.
