Add ground beef to the skillet, breaking it apart with a wooden spoon. Cook until fully browned and no longer pink.

Stir in soy sauce, brown sugar, and crushed red pepper or gochujang. Allow the mixture to simmer for several minutes until the sauce thickens and coats the beef evenly.

While the beef simmers, slice cucumbers and julienne carrots. Toss with a pinch of salt and a splash of rice vinegar to create a quick pickle.

In a separate small pan, fry the egg sunny-side up or to preferred doneness.

Spoon cooked rice into a serving bowl. Top with seasoned ground beef, arrange pickled cucumber and carrots alongside, then place the fried egg on top. Garnish with chopped green onions and toasted sesame seeds.
