05 - 1 red bell pepper, diced
06 - 1 small onion, diced
07 - 4 garlic cloves, minced
08 - 3 cups cooked jasmine rice (preferably day old)
09 - 1 tablespoon Thai black soy sauce
10 - 1 tablespoon fish sauce
11 - 1 teaspoon shrimp paste
12 - 2 green onions, sliced
13 - 1 cup fresh pineapple chunks
14 - 1/2 cup roasted cashews

# Steps to Prepare:

01 - Heat 1 tablespoon of oil in a wok over high heat. Add shrimp and stir fry until just cooked through. Transfer to a bowl and set aside.
02 - Add remaining oil to the wok. Pour in beaten eggs and scramble until set. Remove and set aside with shrimp.
03 - Add onion, bell pepper, garlic, and chilies to the wok. Stir fry until fragrant and slightly softened.
04 - Add cooked jasmine rice, soy sauce, fish sauce, and shrimp paste. Stir fry thoroughly over high heat until well mixed and heated through.
05 - Return shrimp and scrambled eggs to the wok. Stir in pineapple, green onions, and cashews. Cook 1-2 minutes more, stirring constantly. Serve hot.
