Process Oreo cookies in a food processor until finely ground.

Reserve 30 g of crushed cookies for topping. In a medium bowl, mix the remaining cookie crumbs with softened cream cheese and a pinch of kosher salt until thoroughly combined.

Line a baking sheet with parchment paper. Using a small cookie scoop, shape the mixture into uniform small balls and place them on the prepared sheet.

Freeze the formed balls for approximately 30 minutes until they are slightly firm.

Coat each frozen ball in melted chocolate, then place back on the baking sheet. Immediately sprinkle with the reserved cookie crumbs. Freeze again for 15 minutes until the chocolate coating hardens completely.
