Harvest Cobb Salad with Apples (Printer-Friendly)

01 - 600 g sweet potatoes, cut into 2.5 cm cubes
02 - 15 ml olive oil
03 - Kosher salt, to taste
04 - Freshly ground black pepper, to taste
05 - 120 g cooked bacon, chopped
06 - 200 g mixed spring greens
07 - 90 g romaine lettuce, chopped
08 - 225–450 g cooked shredded turkey or chicken
09 - 1 Honeycrisp apple, cored and diced
10 - 65 g pecans, chopped
11 - 40 g dried cranberries
12 - 50 g freshly grated Parmesan cheese

→ Maple Vinaigrette

13 - 60 ml extra-virgin olive oil
14 - 60 ml white balsamic vinegar
15 - 2 tablespoons minced shallot
16 - 15 ml pure maple syrup
17 - 10 ml Dijon mustard
18 - Kosher salt, to taste
19 - Freshly ground black pepper, to taste

# Steps to Prepare:

01 - Preheat oven to 200°C. Arrange sweet potato cubes on a baking sheet, drizzle with olive oil, season with salt and pepper, and toss to coat. Spread in a single layer and roast for 25 minutes, tossing halfway through, until tender and lightly browned.
02 - In a large salad bowl, combine mixed spring greens and chopped romaine. Toss gently to mix the greens evenly.
03 - Layer roasted sweet potatoes, chopped bacon, shredded turkey or chicken, diced apple, pecans, dried cranberries, and freshly grated Parmesan evenly over the greens.
04 - In a small bowl, whisk together extra-virgin olive oil, white balsamic vinegar, minced shallot, maple syrup, and Dijon mustard until emulsified. Season to taste with salt and pepper.
05 - Drizzle the maple vinaigrette over the salad just before serving. Toss gently to combine and serve immediately.
