# What You’ll Need to Cook:

→ For the Chicken

01 - 900 grams boneless, skinless chicken breasts, cut into small cubes
02 - 3 tablespoons low sodium taco seasoning
03 - 120 millilitres water
04 - Salt, to taste
05 - Black pepper, to taste
06 - Non-stick cooking spray, for sautéing

→ Salad Base and Toppings

07 - Romaine lettuce, freshly chopped
08 - Cooked corn kernels
09 - Cherry tomatoes, sliced
10 - Shredded cheddar cheese
11 - Green onions, sliced
12 - Fresh cilantro, chopped
13 - Doritos Nacho Cheese flavoured chips, crushed

→ To Serve

14 - Ranch dressing
15 - Catalina dressing

→ Optional Garnishes

16 - Black beans, drained and rinsed
17 - Pinto beans, drained and rinsed
18 - Kidney beans, drained and rinsed
19 - Sliced black olives
20 - Avocado slices
21 - Crispy bacon, chopped
22 - Fresh lime wedges
23 - Sour cream

# Steps to Prepare:

01 - Heat a large non-stick skillet over medium-high heat and coat with cooking spray. Add cubed chicken and season with salt and black pepper.
02 - Sauté chicken, stirring frequently, for 10 minutes or until cooked through and lightly golden.
03 - Sprinkle taco seasoning evenly over the chicken. Pour water over the chicken and stir to evenly coat.
04 - Bring mixture to a boil, then reduce heat and allow to simmer uncovered for 5 to 8 minutes until sauce thickens and coats the chicken. Remove from heat.
05 - Arrange chopped romaine lettuce in serving bowls. Top with cooked corn, sliced cherry tomatoes, shredded cheddar cheese, green onions, and chopped cilantro.
06 - Spoon hot or chilled taco chicken over the prepared salad. Add crushed Doritos Nacho Cheese chips and your preferred toppings.
07 - Drizzle ranch or Catalina dressing over each salad just before serving. Garnish with additional optional toppings as desired.
