# Step-by-Step Instructions:

01 - Season chicken breasts on both sides with kosher salt and freshly ground black pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Sear chicken until golden, about 4 minutes per side. Remove from skillet and set aside.
02 - Reduce heat to medium. Add remaining 1 tablespoon olive oil to the skillet. Sauté diced shallot and sliced mushrooms until golden, about 5 minutes. Add minced garlic, fresh thyme leaves, and dried oregano; cook until fragrant, about 1 minute.
03 - Pour in chicken broth, scraping up browned bits from skillet bottom. Gradually add half and half, bring mixture to a simmer, then season with additional salt, pepper, and a pinch of crushed red pepper flakes. Stir in gnocchi and return seared chicken to the pan.
