# What You’ll Need to Cook:

→ Primary Proteins

01 - 500 g stewing beef, cut into 2.5 cm cubes (preferably chuck roast)
02 - 450 g ground beef

→ Aromatics and Vegetables

03 - 2 tablespoons olive oil
04 - 1 large onion, finely diced
05 - 1 green bell pepper, diced
06 - 1 orange bell pepper, diced
07 - 3 garlic cloves, minced
08 - 1 chili pepper, diced (such as jalapeño, poblano, or other preferred variety)

→ Tomato Base

09 - 800 g canned diced tomatoes, undrained
10 - 500 ml beef broth

→ Beans

11 - 400 g canned red kidney beans, drained and rinsed

→ Seasonings

12 - 2 tablespoons chili powder
13 - 1 teaspoon smoked paprika
14 - 2 teaspoons ground cumin
15 - 1 teaspoon salt, or to taste

→ Optional Toppings

16 - shredded cheddar cheese
17 - sour cream
18 - chopped green onions
19 - tortilla chips or corn chips

# Steps to Prepare:

01 - Heat olive oil in a large, heavy-bottomed pot over medium-high heat. Add onion, green bell pepper, orange bell pepper, and garlic. Sauté for approximately 7 minutes, until vegetables become tender and aromatic. Transfer the mixture to a bowl and set aside.
02 - Add stewing beef cubes and ground beef to the pot over medium-high heat. Sear until well-browned on all sides, about 10 minutes. Drain excess fat if necessary.
03 - Return the sautéed vegetables to the pot with the browned meat. Stir in diced tomatoes with their juices, beef broth, chili powder, cumin, smoked paprika, salt, diced chili pepper, and kidney beans.
04 - Cover the pot and simmer over low heat for 60 minutes, stirring occasionally. Uncover and continue simmering for an additional 30 minutes, allowing the chili to thicken and flavors to meld.
05 - Ladle chili into serving bowls and garnish with shredded cheddar cheese, sour cream, green onions, and tortilla chips as desired.

# Extra Cooking Tips:

01 - Use well-marbled chuck for stewing beef as it becomes exceptionally tender after prolonged simmering.
02 - For extra depth, combine multiple chili pepper types according to preferred heat and flavor.
03 - Allowing chili to cook uncovered during the final stage helps to achieve a robust, hearty consistency.
04 - Alternative beans such as pinto, cannellini, or black beans may be substituted for kidney beans.
