Chicken Cacciatore Slow Cooker (Printer-Friendly)

Tender chicken thighs cooked with peppers, mushrooms and olives in a flavorful Italian-style sauce. Perfect over pasta!

01 - 6 bone-in, skin-on chicken thighs
02 - 1 tablespoon olive oil
03 - Salt to taste
04 - Pepper to taste
05 - 8 ounces sliced mushrooms
06 - 1 1/2 teaspoons minced garlic
07 - 1/2 cup thinly sliced onion
08 - 1 green bell pepper, cut into 1/2 inch pieces
09 - 1 red bell pepper, cut into 1/2 inch pieces
10 - 1/2 teaspoon Italian seasoning
11 - 1 24-ounce jar marinara sauce
12 - 1/2 cup pitted kalamata olives
13 - 2 tablespoons chopped parsley

# Steps to Prepare:

01 - Heat olive oil in a large pan over medium-high heat. Season the chicken on both sides with salt and pepper.
02 - Cook the chicken for 4-5 minutes per side, or until golden brown.
03 - Remove the chicken from the pan and place it in the slow cooker.
04 - Add the mushrooms to the pan and cook for 4-5 minutes or until tender.
05 - Add the minced garlic to the pan and cook for 30 seconds.
06 - Place the mushroom mixture, onion, bell peppers, Italian seasoning, and marinara sauce in the slow cooker. Gently toss all the ingredients together.
07 - Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
08 - Remove the cover and stir in the olives. Sprinkle parsley over the top and serve.

# Extra Cooking Tips:

01 - The chicken will release liquid as it cooks, which will thin out the sauce. If the sauce is too thin, thicken it by uncovering the slow cooker and running it on high heat for 20 minutes.
