14 - 120 ml sour cream

18 - 4 medium russet potatoes
19 - 2 tablespoons olive oil
20 - 1 teaspoon garlic powder
21 - 1 teaspoon paprika
22 - 0.5 teaspoon salt
23 - 0.5 teaspoon black pepper

# Steps to Prepare:

01 - Wash and optionally peel the potatoes. Cut into evenly sized fries and soak in cold water for 30 minutes to remove excess starch.
02 - Preheat the oven to 220°C or heat oil in a deep fryer to 190°C. Drain and pat the fries dry. Toss with olive oil, garlic powder, paprika, salt, and pepper. Arrange in a single layer on a baking sheet or fry in batches until golden and crisp. For baked fries, cook for 25 to 30 minutes, flipping halfway.
03 - Heat olive oil in a large skillet over medium heat. Add diced onions and cook until soft. Add minced garlic and cook for 1 minute. Add ground beef, breaking up with a spoon, and cook until browned. Drain off excess fat. Stir in chili powder, smoked paprika, cumin, salt, and pepper. Mix in salsa and simmer for 5 minutes.
04 - Warm tortillas in a skillet or microwave to make them pliable for assembling.
05 - Spread a layer of sour cream in the center of each tortilla. Top with a scoop of beef mixture, shredded cheddar and Monterey Jack cheeses, lettuce, diced tomatoes, and cilantro if desired. Fold the sides inward and roll up tightly from the bottom.
