# Steps to Prepare:

01 - Heat olive oil in a large pan over medium-high heat. Add onion, celery, bell pepper, and jalapeno. Cook for 5 minutes until softened.
02 - Stir in the garlic and sliced andouille sausage. Cook for 1 minute until garlic is fragrant.
03 - Add crushed tomatoes and Cajun seasoning. Stir well, bring to a boil, then reduce heat and simmer for 20–30 minutes to develop flavor.
04 - Tuck the shrimp into the simmering sauce and cook for 5 minutes until shrimp are opaque and pink.
05 - Stir in reserved pasta water and cooked pasta noodles. Toss to coat evenly and thicken the sauce slightly.
06 - For a creamy version, stir in sour cream, crema, or other creamy ingredients at this stage and mix thoroughly.
07 - Garnish with parsley, red pepper flakes, and green onions. Add hot sauce if desired and serve hot.
