Bucatini all'Amatriciana Tomato Pancetta (Printer-Friendly)

Savor bucatini tossed in tomato sauce with pancetta and finished with freshly grated pecorino.

# What You’ll Need to Cook:

01 - 450 g bucatini pasta

→ Sauce

02 - 2 tablespoons olive oil
03 - 225 g pancetta, guanciale, or thick-cut bacon, cut into 1.25 cm pieces
04 - 1 small onion, finely chopped
05 - 28 ounces (800 g) tomato sauce
06 - 60 ml dry white wine
07 - 0.5 teaspoon freshly ground black pepper
08 - 0.25 teaspoon salt, or to taste

09 - 1 cup pecorino cheese, freshly grated
10 - Extra olive oil, for drizzling

# Steps to Prepare:

01 - Bring a large pot of salted water to a rolling boil. Add bucatini and cook 1 minute less than package instructions for al dente texture.
02 - While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add pancetta and onion, stirring occasionally until lightly browned, about 5 minutes. Season with black pepper.
03 - Pour dry white wine into the skillet and scrape up any browned bits from the bottom. Continue cooking until most of the wine has evaporated, approximately 3 minutes.
04 - Add tomato sauce and 60 ml reserved pasta water to the skillet. Season with salt and additional black pepper if needed. Cover and simmer gently for 10 minutes.
05 - Drain bucatini and transfer directly to the skillet. Increase heat to high. Stir and toss until sauce thickens slightly and evenly coats the pasta.
06 - Remove skillet from heat. Fold in half of the grated pecorino, mixing to incorporate. Serve immediately with extra cheese and a drizzle of olive oil.
