In a bowl, combine pork cubes with salt, black pepper, garlic powder, and smoked paprika. Toss until all pieces are thoroughly coated.

Heat olive oil in a large skillet over medium-high heat. Add pork cubes in a single layer and sear on all sides until golden and browned, about 6 to 8 minutes.

While pork is searing, whisk together balsamic vinegar, Dijon mustard, honey or brown sugar, soy sauce, and minced garlic in a small bowl until smooth.

Reduce skillet heat to medium. Pour the prepared balsamic glaze over the pork and stir to coat evenly. Simmer for 3 to 5 minutes until the sauce thickens and clings to the pork nuggets.

Remove skillet from heat. Serve pork nuggets warm, optionally garnished with freshly chopped herbs.
