# What You’ll Need to Cook:

01 - 1 whole grain bagel
02 - 1 tablespoon unsalted butter, softened
03 - 2 large eggs
04 - 1 small ripe Hass avocado
05 - ¼ teaspoon kosher salt
06 - ⅛ teaspoon ground black pepper
07 - ¼ teaspoon red pepper flakes
08 - Chopped fresh herbs: cilantro, parsley, chives

# Steps to Prepare:

01 - Slice bagel in half. If the hole is very small, use a tool like a cookie cutter to enlarge it. Lightly spread the cut sides of the bagel with butter.
02 - In a small bowl, mash the avocado with kosher salt, black pepper, and red pepper flakes (if using). Adjust seasoning to taste.
03 - Heat a non-stick skillet over medium and place the bagel, butter-side down, in the skillet. Toast until golden, then flip and place on a plate, toasted side up.
04 - Spread the toasted sides of the bagel with mashed avocado and return the bagel to the skillet, avocado-side up.
