Slice bagel in half. If the hole is very small, use a tool like a cookie cutter to enlarge it. Lightly spread the cut sides of the bagel with butter.

In a small bowl, mash the avocado with kosher salt, black pepper, and red pepper flakes (if using). Adjust seasoning to taste.

Heat a non-stick skillet over medium and place the bagel, butter-side down, in the skillet. Toast until golden, then flip and place on a plate, toasted side up.

Spread the toasted sides of the bagel with mashed avocado and return the bagel to the skillet, avocado-side up.

Crack an egg in the center of the bagel hole. Cover the skillet and cook until the egg is set, about 3 minutes for medium-soft yolks. Use a lid or a sheet pan to trap heat.

Transfer to a serving plate, garnish with chopped fresh herbs, and enjoy immediately.
