Combine cornstarch with water until smooth, then stir into the simmering apples. Cook for 1 to 2 minutes until thickened. Remove from heat and mix in vanilla extract.

Place each tortilla flat. Spoon apple filling along the center, fold the bottom edge slightly upward, then roll tightly to form a wrap. Secure with a toothpick if needed.

In a small pan, melt remaining butter and brown sugar over low heat until smooth and glossy. Drizzle over the assembled wraps.
