Place a nonstick skillet over medium-low heat or preheat a panini press to medium-high.

Spread 1 tablespoon apple butter evenly over each slice of bread. For each sandwich, layer half the sage, half the cheddar cheese, a layer of apple slices, and half the turkey onto two slices of bread. Top with the remaining bread slices, placing them apple butter side down.

Lightly butter the outsides of each assembled sandwich to ensure an evenly golden crust.

When the skillet or panini press is hot, grill each sandwich for 2 to 4 minutes per side, or until bread is toasted and cheese is melted. Use additional butter or nonstick spray if needed to prevent sticking.
