In a large bowl, gently combine ground chuck, ground beef ham, minced garlic, ginger paste, sambal chili paste, teriyaki sauce, salt, and black pepper. Mix just until combined and shape into 6 patties with a slight indent in the center.

Arrange the red onion rings on a hot grill over medium heat. Cook for 8-10 minutes, turning occasionally, until deeply caramelized and soft.

Sprinkle pineapple slices evenly with brown sugar on both sides. Place on the grill and cook 2–3 minutes per side until grill marks develop and sugar is bubbling and caramelized.

Heat the grill to medium-high. Place patties on the grill and sear without pressing for 3–4 minutes per side. Brush patties with teriyaki sauce after flipping, and top with Swiss cheese slices during the final minute, closing the lid until the cheese melts.

Place Hawaiian rolls, cut side down, on the grill for 1–2 minutes until lightly golden and crisp.

On each toasted roll bottom, layer a cheeseburger patty, a caramelized pineapple slice, and a generous portion of grilled onions. Drizzle with extra teriyaki sauce and top with the other half of the roll. Serve immediately while warm.
