# What You’ll Need to Cook:

01 - 60 ml jasmine rice
02 - 15 g fresh cilantro, roughly chopped
03 - 1.25 ml kosher salt
04 - Juice and zest of 0.5 lime

→ Air Fryer Shrimp and Peppers

05 - 10 jumbo shrimp (U-12/15), peeled and deveined
06 - 15 ml olive oil
07 - 15–30 ml blackened seasoning
08 - 2 bell peppers, thinly sliced
09 - 1 small white onion, thinly sliced

→ Coconut Curry Sauce

10 - 400 ml full-fat coconut milk
11 - 8 g cornstarch
12 - 7 ml coconut oil
13 - 2 garlic cloves, minced
14 - 15 ml fresh ginger, grated
15 - 30 ml red curry paste
16 - Juice and zest of 0.5 lime
17 - 5 ml fish sauce (optional)
18 - 2.5 ml chili powder
19 - 0.5 ml ground cloves
20 - 1.25 ml kosher salt

# Steps to Prepare:

01 - Cook jasmine rice according to package instructions. Once cooked, stir in cilantro, kosher salt, and the juice and zest of half a lime.
02 - Combine peeled shrimp, olive oil, blackened seasoning, sliced bell peppers, and sliced onion in a mixing bowl. Toss until well coated.
03 - Preheat air fryer to 190°C. Arrange the shrimp and vegetables in the basket. Air fry for 12-15 minutes until the shrimp are opaque and vegetables slightly charred.
04 - In a bowl, whisk coconut milk with cornstarch until smooth. Heat coconut oil in a saucepan over medium heat. Sauté garlic and ginger until aromatic, about 1-2 minutes. Whisk in red curry paste; cook for 1 minute. Gradually incorporate the coconut milk mixture, whisking until slightly thickened, 1-2 minutes. Add lime juice and zest, fish sauce (if using), chili powder, ground cloves, and kosher salt. Reduce heat and simmer for 5-10 minutes.
05 - Divide rice between serving bowls. Top with shrimp and peppers, then spoon over the coconut curry sauce. Garnish with additional fresh cilantro if desired.
