# Required Ingredients:

01 - 1 kg chicken wings, drumettes or flats, rinsed and patted dry

→ Coating

02 - 30 g unsalted butter, softened
03 - 1 teaspoon paprika
04 - 0.5 teaspoon cayenne pepper
05 - 1 teaspoon garlic powder
06 - 1 teaspoon fine sea salt
07 - 0.5 teaspoon freshly ground black pepper
08 - 2 teaspoons baking powder
09 - 2 teaspoons cornstarch

→ Sauce

10 - 90 ml prepared sweet chili sauce
11 - 15 g unsalted butter
12 - 2 cloves fresh garlic, finely minced
13 - 1 lime, juiced
14 - 1 tablespoon Momofuku chili crunch or 0.5 teaspoon red pepper flakes
15 - 2 tablespoons fresh cilantro, chopped

# Step-by-Step Instructions:

01 - Soak chicken wings in a mixture of vinegar and water for 2-3 hours. Rinse thoroughly and pat dry. Make shallow incisions into the chicken flesh to facilitate seasoning penetration.
02 - Rub softened butter generously both under and over the chicken skin. Sprinkle paprika, cayenne, garlic powder, salt, black pepper, baking powder, and cornstarch over the wings. Toss until pieces are evenly coated.
03 - Arrange wings in a single layer in the air fryer basket. Cook at 200°C for 20-25 minutes, turning halfway through, until skin is crisp and golden and internal temperature reaches 75°C.
04 - While wings cook, combine sweet chili sauce, 15 g butter, minced garlic, lime juice, and chili crunch or red pepper flakes in a small pan set over low heat. Stir until butter melts and sauce is heated through.
05 - Transfer hot wings to a large bowl. Pour in the warm sauce and toss thoroughly to coat. Garnish with freshly chopped cilantro before serving.
