Roll out the thawed puff pastry to 1.5 times its original size. Using a 9 cm circular cutter, cut 8 rounds.

Place parchment paper on a baking sheet. Dot 8 half-tablespoons of honey onto the parchment. Score the surface of each brie round and place each on a honey dollop. Wrap the puff pastry rounds over the brie tightly.

Pinch the edges of the pastry with a fork to prevent puffing during baking.

Brush each assembled bite with beaten egg. Bake in a preheated oven at 200°C for 18 to 20 minutes until golden brown.

Transfer baked bites to a serving platter, sprinkle with finely chopped fresh chives, and drizzle with additional honey.
