07 - 1 large yellow onion, sliced
08 - Kosher salt, to taste
09 - Freshly ground black pepper, to taste
10 - 6 Italian sausages (sweet or hot), sliced into quarters

# Step-by-Step Instructions:

01 - Preheat the oven to 200°C. In a large bowl, whisk together extra-virgin olive oil, red wine vinegar, minced garlic, dried oregano, and crushed red pepper flakes until fully combined.
02 - Add sliced bell peppers and sliced onion to the marinade. Toss thoroughly to ensure the vegetables are evenly coated.
03 - Transfer coated vegetables to a 23 x 33 cm baking pan. Distribute sausage pieces evenly over the vegetables. Season generously with kosher salt and freshly ground black pepper.
04 - Bake in the preheated oven for 40 to 45 minutes, or until the vegetables are tender and the sausages are cooked through, turning the sausages once halfway through baking if desired.
05 - Remove from the oven and scatter freshly sliced basil on top. Serve hot, either as a main course or with a favourite side.
