Place steak cubes in a large bowl and add olive oil, soy sauce, onion powder, garlic powder, and black pepper. Mix thoroughly to coat the steak evenly. Let marinate at room temperature for 15–30 minutes.

Wash, peel, and cut russet potatoes into even pieces. Rinse thoroughly with cold water and pat dry. Combine potatoes with olive oil and seasoned salt in a separate bowl, tossing to coat.

Transfer potatoes to an air fryer basket and cook at 200°C for 15–20 minutes, shaking or stirring every 5 minutes until golden and tender. Alternately, roast in a preheated oven at 220°C for 25–30 minutes, stirring halfway through.

Heat a large, heavy skillet over medium-high heat. Once hot, add steak bites in a single layer. Sear for 2–3 minutes, then turn and cook until done to preference.

Reduce heat to medium-low and add unsalted butter to the skillet with steak. Once melted, add minced garlic and sauté for 30–45 seconds until fragrant. Remove from heat.

Add cooked potatoes to the skillet with steak and garlic butter. Gently toss to evenly coat and combine. Serve immediately.
